In honor of Father’s Day, Janie Smith, who along with her late husband, Doug Smith, founded Honest Abe Log Homes in 1979, shares a recipe for turning a humble sweet potato into Sweet Potato Souffle. Janie, daughter April and son Shane own and operate Honest Abe. Special occasions with Janie’s family are celebrated with beloved family dishes like sweet potato souffle, which was her husband’s favorite dish.
Souffle
- 3 cups sweet potatoes, mashed
- 1 cup sugar
- 1⁄2 cup butter
- 1/3 cup milk
- 2 eggs
- 2 tsp vanilla
Topping
- 1 cup light brown sugar
- 1⁄2 cup flour
- 1/3 cup butter
- 1 cup nuts
Mix the first 6 ingredients and pour into casserole dish. Then mix the topping ingredients and add to the above. Bake at 350 degrees for about 30 minutes.
April Smith Patterson praised her mother’s cooking.
“Mom’s Sweet Potato Souffle was Dad’s favorite recipe. She’d fix it for him on his birthday, holidays, and randomly throughout the year just to see him smile. He absolutely loved it.
I wanted to share how Mom was and continues to be the backbone of or family. She is the most giving, loving, sweetest, and selfless person I have ever known. She has been that way my entire life and I saw that growing up and even more now that I have a child of my own. I don’t know how she managed to work full time, come home with such a glow and smile and have a full meal cooked and on the table when Dad got home… she amazes me and is and has been such a blessing to everyone who knows her.
Mom loves to cook and is amazing at it… she still cooks Dad’s favorite for us throughout the year and we always enjoy sharing how much Dad loved that dish. So this is a very very special recipe she is sharing and I hope all the readers of Honest Abe Living enjoy it as much as our family does.”
