Recipe by Melissa Watson, Sales Representative at the Honest Abe Cookeville Model Home and Sales Center
 
Cookies:
3/4 cup shortening
1 cup sugar
2 eggs
2 tsp. vanilla
2-1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
 
(Omit Baking Powder and salt if using self-rising flour.)
 
Combine flour, baking powder, and salt. Mix thoroughly shortening, sugar, eggs and vanilla, then blend flour mixture in. CHILL at least 1 to 2 hour. Roll dough 1/8″ thick on floured board. Cut into desired shapes. Place on an ungreased baking sheet and bake 6-8 minutes at 350 degrees. Cookies will look undercooked, but will continue cooking for a few minutes out of the oven.
 
 
Icing:
1 stick butter
2 tsp vanilla
4 cups powdered sugar
1/4 to 1/2 cup milk
 
Optional: Food Coloring & Sprinkles
 
Cream butter and vanilla. Gradually add powdered sugar and add milk till you get the desired consistency of icing. Add food coloring and sprinkles for special holidays and just for fun! These freeze well.
