This recipe is onion soup for two made easy. It was developed by onion soup enthusiast Claudia Johnson, marketing director for Honest Abe Log Homes, who wanted a fast way to make traditional-tasting onion soup. From start to finish this recipe takes about 30 minutes.
Here are her instructions:
You’ll need one large onion or two small onions, peeled and diced, for every two people to be served.
Place the chopped onion in a microwave safe dish with two bouillon cubes per person. Beef is preferred, but if necessary, vegetable cubes can be substituted (though it changes the taste dramatically).
Add 1/4 stick of butter to the onions and cubes.
Turn oven on 400 degrees.
Cover and microwave until butter and cubes are melted and onions are a translucent brown.
Spoon half the onion mixture into individual oven-proof bowls or crocks, then fill 2/3 with water. You may also add white wine to taste as an option.
Cut French bread into 1/4″ slices. Place one slice in each crock of the soup mixture. Cover with sliced provolone and a dash of fresh-ground pepper.
Put in hot oven on a baking sheet for about 10 minutes. Just before removing from the oven, turn the settings to broil until cheese bubbles. Watch it, because this happens fast!
