Cooking at Southern Grace Farmhouse
Honest Abe Log Homes co-owner April Patterson and her husband, Nick Patterson, love cooking together in their new 10″ round log home’s modern farmhouse kitchen on their Acres of Grace Farm. The Pattersons are very involved with Clay County (TN) Young Farmers, and they contributed some of their favorite recipes to the organization’s Farm to Fork cookbook. Here they share their quick and easy recipe for Taco Casserole.
1 lb. ground beef
1 (1.25) package taco seasoning
1 (15oz) can re-fried beans
2 c. Monterrey Jack cheese
1 c. mild or hot salsa
2 chopped green onions
1 (2.33) can of sliced black olives
1 chopped tomato
2 c. of coarsely chopped or crushed corn chips
Brown ground beef and drain off excess fat. Add taco seasoning and cook according to package directions, adding proper amount of water. Put corn chips at the bottom of an 8×8” dish. Cook refried beans on stove until hot. Add 1 c. cheese and 1 c. salsa to the heated beans. Stir until combined. Pour beans over corn chips in dish. Add beef to top of the beans. Sprinkle remaining cheese over top. Sprinkle green onions and black olives over cheese. Bake in a 375-degree oven until the cheese is sufficiently melted. Take out of oven and sprinkle chopped tomatoes on top. Wait 1 to 2 minutes before serving your dish.
